Extracted Development

New in 2023! After the incredible success of our first-ever Extracted Development at Birmingham Coffee Festival in July, we're thrilled to bring this epic coffee competition to our Manchester community for the very first time!

Designed by Cup North, Extracted Development is not just a competition; it's a celebration of true behind-the-bar artistry, skill sharing, and the vibrant coffee personalities that make our community so exceptional, while never losing focus on accessibility, community and environmentalism. Crafted with the realities of a bustling cafe environment in mind, our Rules and Regulations has been built to reflect and celebrate the expertise of being a truly great coffee professional.

Now, for our Manchester edition, we're turning it up a notch! Over two incredible days, witness talented baristas and roasters from across the UK compete, immerse yourself in thought-provoking talks about coffee competition culture, and experience the extension of our buzzing competition brew bar.

    We all talk about roasting a lot when it comes to coffee- but what is actually happening to those green beans during the roasting process? Founder of Lucid Coffee Roasters, Stephen Houston, talks us through the magic of the maillard reaction; covering everything from first crack to cup; an unmissable exploration into a process that remains mysterious to so many of us. This talk will guide you to developing a better understanding of the roasting process and help any coffee lover with future decision making when it comes to buying and brewing coffee!

    Entrepreneur, investor and craft chocolate specialist, Spencer Hyman joins us at this year’s Manchester Coffee Festival to help us learn more about the world of craft chocolate and explore the comparisons between all things craft chocolate and specialty coffee. Spencer co-founded Cocoa Runners in late 2013, to help customers all over the world find the world’s greatest single estate, small batch chocolate. Cocoa Runners now works with artisan chocolate creators from around the world, such as Tibito in Colombia, Marou in Vietnam, Omnom in Iceland, Fruition in the USA and Menakao in Madagascar along with over 100 others from over 35 countries, meaning Spencer has a wealth of knowledge and experience to share with Manchester Coffee Festival attendees!

    The Lorna Young Foundation and Twinings will share information from three Farmers' Voice Radio projects in different stages of implementation; ranging from a recently completed project in Nandi County, Kenya, working with smallholder tea farmers in Twinings' supply chain, to an ongoing extension of the Kenya project, working with women TEA farmers in particular; to a new project in northern Nigeria working with Twinings ginger and hibiscus suppliers.

    Hannah Davis from Farmers' Voice Radio will be joined live online by Peris Ochieng, Twinings Ethical Sourcing Manager for Africa and Carolyne Mutai, Project Officer for Sireet Outgrowers Empowerment and Producer Company Ltd, based in Nandi Hills in Kenya.

    Manchester Coffee Festival’s Community Partner, Farmer’s Voice Radio, will share a short presentation with the MCF audience.

    Through real world examples, Alan Tomlins from Raw Material will explore how a typical coffee value chain works in three different countries, from the farm gate price paid to the coffee producer to the landed price a coffee roaster pays for their green coffee.

    Most importantly, this talk will look at where and how profit and social impact can be maximised for coffee producers as they sell into the specialty coffee market.

    An accessible and interesting exploration into what can seem like an intimidating topic, this is a talk for coffee professionals and enthusiastics alike!

    Mió is a coffee farm in Monte Santo de Minas, Brazil and also an exporter and importer of green coffee in the UK, and their COO for International Businesses, Ana Luiza Pellicer, joins us at Manchester Coffee Festival to share more on their latest research project in collaboration with Assembly Coffee/Volcano Coffee Works ‘Sombra’. Sombra, a 5-year tripartite research experiment that started last year at Mió in partnership with Volcano Coffee Works (UK), guided by IFES (Brazil), and operated by the workers at the farm, will be explored further in this talk; as well as a deeper dive into why it’s such an important research project for all involved. A topic that brings forward challenging ideas about climate change and what this means for coffee, but also celebrates the connection of the whole supply chain on reimagining the future of specialty coffee.

    What is a welcoming environment for customers in specialty coffee shops? This talk dives into the different aspects that create a comfortable and accessible space for people, including customer service, bar design, equipment, menus and POS. This talk is for everyone, from coffee shop owners and baristas, to customers, talking about the myriad of things that impact the experience of a customer in a specialty coffee shop, and how we can understand and harness it.

    Death before Decaf! A slogan shouted from 1000 cheap Etsy T-shirts, but why is this specific coffee niche so abused amongst mainstream coffee lovers? Dave Jameson, Q-grader and founder of Danelaw Coffee, explores some of the possible reasons why decaf has such a poor reputation and how to find decaf that satisfies. Learn some of the ways in which decaf is processed, what the challenges are around roasting it well and why drinking decaf is still something that's worth doing, even if you are a die hard caffeine fiend. Find out what the best decaf is for you, if you want to still drink organic coffee and a surprising source of decaf that is usually pretty fresh.

What are some examples of different types of processing, and how will this impact the taste of the coffee you’re drinking? With a vast wealth of industry experience, Caravela’s Abbie Manning joins the stage at Manchester Coffee Festival to explore the topic of processing in an accessible and interesting way during this talk.

    Sebastian Ramirez and Roger Zapata will be joined by Damian Blackburn to talk about Sebastians amazing El Placer Farm Project.

    Based in Quindio, the beautiful heart of the Colombian coffee belt, and Finca El Placer, in Calarca. The farm utilises washed, honey and natural processing with a twist, and has a beautiful array of heritage varietals, including Geisha, Red, Pink & Yellow Bourbon and Wush Wush.

    Hear about Sebastian’s journey in becoming a fourth-generation producer and how he is pushing the boundaries of coffee as we know it! Grab this opportunity to meet one of today’s pioneers at Manchester Coffee Festival.

    Co-founder of Scenery Coffee Roasters, Alex Wallace, looks into the notion of what ‘specialty’ really means in 2023. Exploring the idea that the historic narratives that set ‘specialty’ apart may now be limiting its ability to progress, Alex advocates for recalibration: challenging the myths that no longer serve specialty's growth and embracing a more inclusive approach. This talk delves into the challenges associated with commodification, and the need to explore differentiation and authenticity within specialty. Charting the journey of specialty coffee, and introducing some bold new notions, this is a talk that’s not to be missed by any coffee lover or professional alike!

La Marzocco will discuss and celebrate the role of the barista; exploring whether the role of barista is evolving, as well as highlighting the important part baristas play in our lives, elevating our coffee experience and creating spaces that allow people to feel welcome and at home; whether that be in a coffee shop, or a less traditional coffee serving space. La Marzocco will hear from a variety of voices in the industry, there to discuss the role of the barista, what this can look like and why it’s important to them.

    There is no denying the breadth of the specialty and hospitality scene; the range of professions available under these umbrellas are so vast and multifaceted that it can be difficult to ever know where to begin or figure out how anybody finds their professional footing! This topic will provide the panellists opportunities to talk about what it means to them to have a career in specialty/hospitality: to reflect on how it is that they got involved in their chosen career- what qualifications they took, what worked and what didn’t. This panel provides an opportunity for resource sharing that can help attendees with their journey into the wider world of specialty coffee, and shows that there’s no single route to finding the work you love.

    The world certainly feels like a tumultuous place at the moment; with political and financial discord rife everywhere you look, it can feel like there are no safe spaces left to find refuge. However, lately, we have seen more businesses within the industry take a strong stance on the creation of safe spaces for all; from founding a queer-roastery, to hosting ‘Coffee Chums’ events for women and non-binary people in coffee and so much more, our panellists of professionals delve into the idea of creating safe spaces within the industry- why they are important and where you can find them. A celebration of the wonderful things that can be achieved when we embrace, make space for and uplift diversity, this exploration into ‘safe spaces’ is a topic for all and not one to be missed.

    What is the best coffee our farm can possibly produce? That’s the question that made Mió start Project Barra.

    During this workshop, Ana from Mió will analyse the impact of Project Barra with a presentation on the scientific results from the first year of research and a comparative cupping session from the first- and second-year coffees. There will 12 coffees on the table with different traditional and fermentation post-harvest techniques.

SCA UK Cup Taster Championship

We are absolutely honoured to be once again the venue host for the prestigious UK Cup Taster Championship, organised by the incredible Specialty Coffee Association on 18 November (Saturday)!

This exhilarating competition brings together the best of the best in the UK coffee industry, where palates are put to the ultimate test. Competitors have to slurp their way through 8 sets of triangle tests (three “cups” of coffee where two are the same and one differs) to spot the odd one out. It's a competition of flavours and discernment, and things heat up as the coffees become increasingly indistinguishable. And the result will be announced instantly as they lift their cups to uncover a red dot that signifies their victory in spotting the odd one out. Family Time

Calling all parents! We have prepared a series of children-friendly activities across the weekend, plus a LGBTQ+ friendly program lineup dedicated on Sunday morning session 19th November so you can sip on your favourite brews while the little ones are treated to a world of fun. From interactive story telling hour to educational coffee-themed treasure hunt, all included in your festival ticket. And guess what? Under 16’s goes FREE!

Farmers’ Voice Radio x Manchester Coffee Festival Treasure Hunt

Did you know that coffee beans are actually seeds? We have hidden pictures of different stages of a coffee plant’s life from seed all the way to cup at different stands around the festival. You can enjoy a nice family time with your children while they learn about the coffee cycle through this mini treasure hunt. What’s more? If they find all of the pictures, they can even win a special prize from us!

  • The fabulous Aida H Dee, also known as 'The Storytime Drag Queen', will be joining us for an hour of exciting storytelling show filled with interactive games, fun performance and pzazz with all our family attendees! This amazing storytelling hour will be accompanied by a BSL interpreter and individual headphone sets for assisted hearing.

We're excited to collaborate with the Manchester Jewish Museum Ladies Textile Group to showcase their latest art installation, 'Conversation over Coffee' at Manchester Coffee Festival this November!

Discover how coffee can unite, promote friendship, and symbolise tolerance and understanding. The piece combines hand-made pockets embroidered with coffee's diverse history, from its origins to its past bans on women, and today's vibrant coffee culture.

What makes this collaboration truly unique? The group consists of multi-faith women from various backgrounds, committed to overcoming prejudice through art.

Manchester Coffee Festival will be served by some of the best local food traders including Get Wurst, Seitans Kebab and Dim Sum Su.

Looking for some true cafe experience? Our cafe space this year will be hosted by Manchester-based brunch expert Rise Brunch. They have prepared an incredible menu exclusively for MCF visitors, with free coffee served for all food orders. Check out their menu:
